Has anyone tried mounting the 5 X114.3 wheels on to 5 X112 hubs? I am looking for some alloys for my Passat and there are some very tasty J wheels with great offset and even greater prices available on the bay.
Will the 2.3mm difference in the PCD's matter?

I wouldn't advise it either.
The PCD is a PCD for a reason. Putting bolts through a wrong PCD will add shear load to the wheel bolts.

Dig it up, slam it and drive it.

there's no safe way without changing your car to the right PCD with adaptors or redrilling. They won't seem such a bargain when one is bouncing along the road beside you at 70mph....

There is some cool stuff out there for 5x112 though! A quick scoot round .de-bay and a snoot round the pissrats on cleaned.be should be all the inspiration you need
