So I left work the other day (on private road) and absolutely booted the Beetle for curse word and giggles. Once I set into normal driving I've since noticed the power is down, on pick up and mid range. It's had an engine management light on now for a few weeks and have put it down to temp sensor etc.
But this is almost like there is a block in the exhaust?

get it plugged in would be first port of call.
is it the 8 or 16 valve engine?

Turbo? Blew a hose booting it and now losing boost? I think this chap is on to something. I replaced an intercooler hose on my mk5 gti and forgot to use the o ring. That was enough to stop the turbo spooling.

Get an OBD reader on it. It is likely in limp mode. Could be a sensor.

That was enough to stop the turbo spooling. Only downside is that the 2 litre is 8 valve and NA in a Beetle  Unless it has an engine swap or is a later model than I'm thinking of... Otherwise, OBD reader is always the easiest pointer as to what is amiss with the car

Had similar on a mk4-ish cabriolet 2l and it was all to do with the secondary air pump emissions bits.

Until you plug it into a decent diagnostic tool, and then check some live data depending on what the codes are, it is a lottery as to what could be wrong.

1st O2 censor changed and code cleared. Still lumpy on tick over and down on power.
Code reader now says "low voltage to number 1 bank 1"
Any thoughts?

I'd be getting a coil pack on it with those misfire codes, common as muck. Avoid a cheap one like Cambraire, utter curse word. It'll probably want an O2 sensor as well, sounds like that's dead but first thing I'd do is the coil pack.
