I've spent a fair bit of time reading but i'm a bit overwhelmed tbh up and over, roller, sectional, slide, side hinged - I dunno I don't feel the need for anything powered or remote controlled I'm thinking I'll keep the original up and over and just add a garage defender and an extra bolt on top I reckon the steel side doors look like they might be the best security wise something like Lathams(who I've been looking at for the side door) but I can't tell - any tips?

Just a few pointers from someone that makes/ fits roller shutters…. Since the advent of the cordless grinder nothing is really safe, its just a matter of slowing them down. Standard garage doors are very easy to break into if you know what you’re doing, those padlocked things you fit at the bottom make them a harder target. A standard roller shutter door are safer but can still be lifted unless you fit bullet locks each side which go through the guide and curtain to prevent this. Insulated roller shutters have a locking mechanism at the top to stop them being jacked open. I wouldn’t dismiss remote systems for either roller shutter as otherwise you need another way in to open the shutter from the inside, unless you fit a key switch outside but this is another weak point as all you need to override it is break the casing and join the wires.

Lathams doors are delivered by pallet network and a lot get damaged and returned. Lathams then sell them as seconds at a reduced price.

From what I've been told, and from me working on my own garage door, only one type of door is a solid choice, which is one of the Cardale options.
A remote shutter door is very convenient however.

those padlocked things you fit at the bottom make them a harder target I've often wondered how much cop those things are, or if a swift side blow from a sledgehammer would just knock it out the ground.

Depends on how well fixed into the ground, usually some of the fixings are under the door so can't easily be knocked out, the padlock needs to be broken. Like I said, it's just about slowing down or deterring them, instead of quietly getting in with a screwdriver they need to make some noise and extra time using a hammer.
