One thing I will say is, no matter which route you take you want to cut out the rot like that before you go getting it dipped/blasted. No point in sending it out for cleaning with all the rusty panels still attached. Not only are you paying to clean stuff that's going to end up in the bin the more areas you can open up the better the process will work. It is nice to think you can strip a car and send it straight to cleaning so you don't have to mess about searching for filler and hidden rust and generally getting caked in underseal but its ultimately a false economy.
I'm lucky when I do work like that ^^^ I do the welding in the blast room and can blast bits as I go. Usually il do an initial blast.. then do another one panels are cut back to clean up an area like that, then blast before i start welding anything back on. Then blast again after welding before paint.. obviously no good if your sending it out for work to be done but it's a big plus on investing in your own blasting pot.
