Not sure how this one will go down but here goes I'm sitting here listening to the sound of lids going pop....... So we have a "postage stamp" garden but Mrs BC likes to only have things growing that give something back - the garden was prepared for winter last weekend some things needed some heavy pruning - which normally horrifies Mrs BC but works better for me as I occasionally need to park a car in it over winter. ![](http://i108.photobucket.com/albums/n19/Bstardchild/Home/DSC_1029-1200.jpg) We had a good crop of ripe figs all summer averaging 1 a day for the July - Sept however the tree still had an awfull lot of unripe green figs on it Our Veg plot provided lots of tomatos but again we had some green ones that were never gonna ripen Time to use them up Ingredients then 3 x Garlic (Harvested early) Onions - little to small but full of flavour 2 kgs of un-ripe figs 2 Kgs of un-ripe tomatos some brown sugar spices and pickling vinegar Some preparation and cooking and some time spent sterilising jars and lids and the window sill loaded up with stuff cooling off ![](http://i108.photobucket.com/albums/n19/Bstardchild/Home/DSC_1033-1200.jpg) 5 Jars of preserved figs on the left (green figs in syrup - great with ice cream or even on their own) 16 Jars of Green Fig and tomato chutney (serve with cheese - just cheese - sod the crackers) Left me with a whole heap of washing up ![](http://i108.photobucket.com/albums/n19/Bstardchild/Home/DSC_1035-1200.jpg)

100% jealous over here.
We had no veggies in this year but both my apple and pear trees planted two years ago gave decent yields for their size and age.
Maybe time to look st planting a fig tree too.

I know you are a man who recycles so if you do plan on getting a fig tree get an old SS washing machine drum so you have one handy to plant the root ball in - stops the roots expanding and encourages growth above ground rather than under it - fruit is only above ground

I know Figs tend to take over a bit. Will deffo look at planting it sensibly.

So in 2015 I left the green figs on the tree as an experiment to see if they would continue to grow the following year - they didn't - Leaving them meant that the fig tree didn't get a prune so it dominated our small garden this year. It did however provide Mrs BC with one or two ripe figs per day and our local bird population with at least one or two a week so everyone was happy. So this weekend it got a heavy prune and as a result I harvested a few green figs (yeah just a few) This is a 35 litre builders bucket ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0343.jpg) Now we had very few green tomatoes this year so no chutney this time - Preserved Green Figs is what I intend to make (great with ice cream or even as a very chunky jam on crusty bread) - I'd done a small batch - back in 2013 - 5 jars as I was unsure if anyone would like them - I should have done more as they were really nice Now the first stage of the process is a bit smelly - it's not unpleasant but it does hang about so I set up an outside cooking/preparation area ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0345.jpg) Now it took me best part of 3 hours to prepare all the figs and I started cooking once I had the first saucepan full Preparation is simple Cut off the stalk and notch the stalk end with a cross - bit like brussell sprouts so practice for Xmas ![:D](//storage.proboards.com/forum/images/smiley/grin.png) Wear good rubber gloves as the white latex like substance is sticky and will also irritate your skin ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0344.jpg) Then once a pan full is prepared - rinse a couple of times with cold water to remove the latex (milky solution means another rinse required) Then a bit of cooking ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0346.jpg) ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0349.jpg) Now this is thirsty work and I'd finished with tea so it must be beer o'clock - a suitable matching refreshment was selected (label being same green) ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/e9fcc159-7d36-445e-9553-c3e74e593ed5.jpg) They don't need initial cooking for long 30 mins is plenty for first stage ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0355.jpg) However darkness fell so last batch picture was this ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0361.jpg) Drain off the figs and cool down and leave overnight in cold water ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0362.jpg) I'd bought some jars...... ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0365.jpg) I think I might need more

Been a busy evening Batch 1 ready ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0379.jpg) Jar Prep ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0376.jpg) Transfer ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0386.jpg) Cooling and lids labeled ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0385.jpg) I can only do 16 Jars in a batch (and had a little left over - so that was set to one side) 2nd batch done and cooling ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0388.jpg) Again 16 Jars with a little left over - added to the previous left over) Stove was getting a bit busy at one stage ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0384.jpg) Fig Marmalade (small batch as a trial) Batch 3 In prep - use the sugar to draw out the moisture so you don't need to add much liquid ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0378.jpg) In the pressure cooker about to get a move on ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0381.jpg) All done ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0391.jpg) Annoyingly I've run out of jars and have the leftover batch and the 1 kgs of figs (not used in Marmalade) to jar off so that's cooling off I'll do that tomorrow when I have got another 12 Jars

That looks good. There's a fig tree that overhangs my balcony, we've had a few figs from that and they were pretty good.
Start a new movement... Eat more figs!

Oh and the secret weapon for Stuffing jars cleanly and easily is a plastic funnel trimmed open to fit in the jar mouth - it's at the back of one of the pictures - I never think to take a picture as I'm filling the jars as I like to get them filled and shut quickly...... So resolved that below ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0393.jpg) So now all finished ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0394.jpg) 16 jars of Batch 1 16 Jars of Batch 2 11 Jars of Fig Marmalade 23 Jars of Batch 3 (leftovers or lucky dip flavour) Bets on which one is going to taste best....... (my money is on Batch 4 - it's always the way it works out when you don't have a list of ingredients and qty to fall back on to re-create it) Now labelled so I don't forget what they are ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0395.jpg) ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0396.jpg) ![](http://i108.photobucket.com/albums/n19/Bstardchild/Figs/IMG_0398.jpg) Thanks for following

My question now, is what the hell are you going to do with 66 jars of figgy products? That's a jar every five days! ![:)](//storage.proboards.com/forum/images/smiley/smiley.png)

Give most of them away to family and friends Fair play, you are single handedly doing your bit to ease constipation in South Norfolk. Send me some jars and I will get West Norfolk running smoothly too.

I'd never imagined myself as in South Norfolk, I know I'm not West Norfolk either ![:D](//storage.proboards.com/forum/images/smiley/grin.png) Anyway that's another issue - clearly you want some jars but they don't post well - if you are ever passing this way give me a shout ![:D](//storage.proboards.com/forum/images/smiley/grin.png)

Good work! Will be making some green tomato chutney myself soon - I have a load that wont ripen before the frosts come... I'm new to this chutney preserve making thing, but I made some tomato and chili a couple of months back. Anyway, I have lots of (gardeners delight) toms that won't ripen up - can I use them anyway then? Got some good chilis so would be a hot as, well a very hot chutney, so would be a shame to waste them.

My moto is not to waste anything if possible you can make great chutney with gardners delight Much as Jamie Oliver winds me up this would be great with a chilli kick www.jamieoliver.com/recipes/member-recipes/recipe-detail/3209/

I nearly asked you to stick a jar in the post as my little pup was a bit bunged up. Then I realised that by the time it arrived, he'd be the size of the R101, so we let nature take its course instead. ![:D](//storage.proboards.com/forum/images/smiley/grin.png) Mmmm, tomato and chilli chutney. Very nice.

Green Tomatoes make a better chutney than ripe ones ![:D](//storage.proboards.com/forum/images/smiley/grin.png) Ripe ones break down during cooking so it loses crunch and it ends up quite sweet
