I've just completed a 775 mile round trip in the Sapporo.
Its a great car to drive, handling isn't bad, comfort is good, engine is great. OK it isn't the quickest in the block and will never rival a Starion for handling, but its a genuinely lovely lovely piece of kit.
So, do I restore it to A1 mint, better than new, shrink wrapped factory condition, or do I straighten the bits that need making good (few bits of bodywork and under the drivers wing) and then modify the curse word to hell?
I was initally going to modify the a$$ off it to get loads of power, but its so good as is......
Decisions decisions... Both have their merits....

I would modify it for sure but I'd aim to keep it comfortable and pleasant to travel in. If anything I'd even try to make it MORE comfortable than stock.
My 510 is wicked fun on a track but trust me...it's pretty horrible to drive on the road for any length of time and no doubt as I strip it to shed weight, it'll get worse.
There's no reason why you can have a road car that's very fast and plush too. That's why I'm enjoying my Silvia at the moment. Power, handling and best of all comfort ;D

I say modify it, but sympathetically... make it faster, improve the handling, but don't sacrifice the qualities that you value in it at the moment.

Mod it! Did you really expect anyone to say anything different on this forum?! I know what you mean though - the car is really nice as standard and it takes a lot of planning to make the car better, rather than just altered, which I personally don't think is much use Whatever you decide to do keep us posted! There's nothing like a long trip to really get to know your car intimately!

Yep I say mod it a little, but keep it comfortable and reliable, that way you can enjoy it more.
