Well,to be honest i'd hope they'd not undo themselves! I had a set of the droopsnoot ones fitted to the Firenza in my avatar picture for about 8000 miles with absolutely no problems whatsoever,and when i came to remove them they came off no problem and were no looser or tighter than when i fitted them,so no problems from personal experience. thats not what hes asking though. from my understanding, the reason no-one else makes stainless wheelnuts and that they're not commerically available, is that stainless is well known for galling in applications like this due to its high friction properties.
I'm not saying that there definately will be problems using stainless in this application, just that there is a reason no one sells em.....

I think that they're probably not that readily available due to production costs ie it's cheaper to make them from cheaper materials and chrome them,or supply those wheel nut covers you can get for some cars (had some on my XJS).
The frictional properties tend to cause more problems with machining than anything else in my experience. I've used them quite successfully on lightly oiled studs/copper-eased studs.
I reckon you might come unstuck if you seriously overtightened them,but if you stick so something around the recommended torque figures then everything should be fine.
I've probably now produced/sold somewhere in the region of 20 sets of stainless nuts,and never heard of anyone having any problems.........

To answer the qs re problems with tightness etc I had a s/s set made by a friend which have been fitted to my Imp for about 2 years now. Never had a problem with them and never expect to. In fact I also have some s/s shank style nuts made by the same guy for the Dunlop alloys I'll be fitting to the Imp and my Vogue....eventually.
As stated, stick a bit of copperslip on the studs and tighten to the correct torque.

From what I have read and encountered it is stainless on stainless that galls up if no lube is used, oooer vicar stainless on steel has always been fine with me, but then again I always have a tub of copper or ally grease about Yup, used to do a lot of stuff with stainless nuts and bolts, they really do like to bind up if you chuck em in dry. Fnar. Or when using a stainless sleeve pipe. Could push them together once, after that you're a bit screwed. Question, is this not better off in parts for sale?
