most of the cars mentioned arent luxo, or that big in the back.
190s are pathetically small in the rear. i don't think youd get a w123 having within budget, they're small in the back, and they rot like f-k, as do e28s, which arent particulalry luxury or large either. w124s and e34s rust marginally less but still aint spacious.
if you want luxury, legroom, and value for money, you need a e32 bmw really. get a 7XXiL model, and they have a slightly longer wheelbase with more room in the back. the w126 S-class has a similar option i think.

There is a world of difference between a large car and a luxo barge, as has been illustrated above. The 190, whilst nice and well built is not 'luxo' and is indeed a little small in the rear. £ for lb you'll struggle to get better than an XJ40. Easy to pick up for under a bag of sand. The later ones don't rot as bad or have the elctrical gremlins of the earlier ones, but they are a little thirsty. jags are to small inside for regulally transporting a 6 and half foot rear passenger, even the LWB version has limited headroom, normally I'm happy to tout jags around as great cars, not in this case.

my brother is selling a 1998 LS400 in the next few weeks, all Black (not two tone like most) tinted windows, black/silver 18's ,
and its got the later 4.0 VVTi V8 , should be more than £2000

A merc everytime (again slightly biased). Ive had a w116 3.5 v8 and a w126 3 litre straight six. Both were bought for around the 500 quid mark and both cost about 500 quid to insure via lancaster (i was 23 when i had the w116 and 26 when i had the w126 and had 3 points on both occasions).
w126 came with cream leather, electric everything and i mean EVERYTHING (even the headrests were electric!!) and wasnt all that bad on fuel if you drove it sensibly (80 miles out of 20 quid), the w116 was a little bit heavier on fuel but was an absolute beast of a car and had 'that' v8 rumble. Trust me mercs are a hell of a lot of car for the money and your mates wont believe that at your age you're lording it up in a merc while they're scrabbling around in a knackered fiesta.
Have a look at my pics to see what I'm on about and maybe persuade you. Get a merc. Do it. You wont look back.

It's faster than the 3.2 V8 Jag (2.8 twin turbo I6), more comfortable, more economical and more spacious inside. We paid £1400 for ours on an S-reg with 33k miles. Failing that; Jag, BMW 7 series, Audi A8, S-class, basically anything that was £30k+ around 12-15 years ago is within reach for £2k-ish.

Insurance was it's real party trick, Forget what the haters say, as far as the insurance company i used are bothered it's a "Modern Classic" because it's over 10 years old and not just a normal car i.e Fiesta, Astra. I know I'm older at 27 but it was £163 a year! You wont find a car with much more rear leg room tbh. I'm 6 foot and I'm lost in the back. ;D Infact if you're serious about a car, and might be interested in mine i could be up for selling it as I'm having no interest in the Sierra atm and don't have the room to keep the pair for too long!
