Judging by this and you 'RPM' thread, it sounds a lot like your idle valve's playing up.
When you're on full lock, the power-steering pumps working hard trying to turn further when it can't, this will put more load on the engine through the belts, making it struggle to idle. Normally the idle valve will let a bit more air into the engine, so the idle increases to counteract the extra load on it.
So yeah, if your idle valve's sticking and a bit slow to react, or just not working properly, then the load could be stalling the engine before the valve can stop it happening.
It could be something else, as I'm not expert on these exact engines, but it would make sense. I'm not sure why reverse would be relevant through.

^ ever tried to push a car backwards on full lock? That's why it shows up more in reverse.
Yes, Idle valve (or aux air valve....) opens to raise the tickover when the PAS pressure rises - there is a switch in the PAS line that senses this.. Seeing as you already have wandering tickover I'd agree with Robin, deal with the idle valve first.
