Excuse me if this is common knowledge, but what exactly is meant by "roll the arches"?

Ah, I think that's when you bend the edges of the arch lips back and outwards a bit, so that they stick out a little further and give you more clearance for the tyres, eg if you were to lower the suspension and/or fit a taller wheel/tyre combination. I could be talking rubbish though!  |

Normally it means physically rolling - using a special rolling machine, the wheel arch lip further round than the normal 90 deg (producing in effect a 'Dutch fold') To gain clearance to the tyres when running non-standard wheels or ride height. Usually when this is done the paint cracks as it can't stretch with the metal and needs to be touched up to avoid rusting.

basically bending the lip on the arch up, so you can lower the car that little bit extra, and or fit bigger/wider wheels  |

I did the arches on my old Astra Estate so that some bigger wheels would go on. Some gentle persuasion with a knock-stick and a bit of hammerite over it afterwards did the trick. Not very pretty, but quick and effective.  |

I think there are two methods really - the one DerbyDan describes (i.e.: the professional way!) and the methods most of us will likely use - the "percussive" method (i.e.: a hammer!)
I did mine as the new tyres were miles wider than the originals. The fronts I just folded the lip inwards with a bodywork hammer and tapped the arch outwards slightly. This also makes sure that there are no sharp edges on the arch, just incase there is still a bit of rubbing on hard cornering - my tyres don't get shredded!
The rears were a bit more involved as the inner arch met the outer near the edge of the arch, so I had to create more space by forcing the inner arch out a bit too!
Normally the whole of the arch doesn't need rolling (depending on how much work you wanna do!) just the top few inches that contact the tyres. It depends on the car though.

best method i have found is using a rolling pin or baseball bat and just rol it round between the tyre and the archif your carfull it dosen't even crack the paint  |

Frosts sell those. Hugely expensive compared to afore mentioned percussive method. A bit like an English wheel you can bolt on!
