The 7"x5" headlights in my daihatsu are rusted & all the reflective is degraded so I've been told will fail an mot. I've looked online & replacements are rubbish but off road led ones are a lot better quality but are they mot legal?

The ones pictured, no. Mot fail, and not really legal. Mainly because they are designed for H4 halogen bulbs, and the LEDs pictured are usually way off for beam pattern.
Is there any fully encased units? Which just have the connections on the rear to join up? Those are fine for MOT, as the unit is designed from the start with a LED light source 👌

Would lights with projector beams rather than reflectors be legal?

Would lights with projector beams rather than reflectors be legal? Yes. They are fine as they are a conversion unit rather than the wrong light source in a halogen lens. obviously pending what the beam pattern is obviously.

Rough Trax carry non LED ones for £20 a side if you would rather stick with incandescent bulbs.

I retail motorcycle parts for a living. In my experience so far, all the cheap ones are absolutely rubbish & the good ones are a ton of money. So much so that I have not even gone there yet on the retail side, as I won’t sell curse word & the good ones are so expensive, no one seems to want to pay it. They will come down & improve, then I’ll go there

The H4 sized projector lensed style globes look very interesting, often only using the original headlight reflector for a supplimental, less focused high beam function. If low-beam is up to standard!?
Unfortunately my car has early projector lens headlights so neither those nor LED replacement globes would seem appropriate & 2.5" LED projector units not so cheap, & dismantling of headlamps to fit too. Premium old Halogen globes not cheap either though. Probably do it one day anyway to add high beam function to those lamps though.
