I have these two almost full bottles of brake fluid.
Priming and getting the brakes clutch working is close.
One is labelled for motorbikes.
Interchangeable or mix?
Dot3 vs Dot4

Either will do, although I wouldn't deliberately mix Dot3 and 4 in a system that is all new: pick one.
I would be more concerned about using fluid from containers that have been open for ages. Personally, I'd bin the open containers and buy a litre of fresh, which ought to be enough to do the whole car with a minimum of waste.

they are both Dot4 !
though as mentioned, unless they are very recent I would just get a new pot.
