St Christopher, patron saint of travelers (and motorists), used to be a fairly common little thing added to cars into the 70s when such superstitions started to drop off. Perhaps a more fitting emblem now would be Saint Cajetan, the patron saint of gamblers and the unemployed Good luck with your new adventure! At least you're going to have no real problems with parts and support since both are seemingly plentiful for these now.

Removing factory underseal is only really necessary where there's obvious problems *but* if you're bothering to repair rotted out bits of roof, it's worth doing everything really. I'm not sure what underseal VW were using in the 80s but it's really good stuff for keeping the rot at bay except for anywhere it's broken and then it's really good stuff for keep the rot in place and allowing it to steadily creep unseen.

It’s a VW, it’s bound to have some rot. They say about MK2s, if you have a rust-free one then you haven’t looked hard enough!
