The guys in the states have been working on servo/relay boards to control systems like aircon, and of course you can always read in data from the megasquirt.
Stick in a bluetooth and you can always use your phone handsfree, add a GPS antenna and get touch screen sat nav.
a custom console/dash will be needed. www.cartft.com/ can supply a lot of the bits you need, and they have pretty good customer service if you need it.
If I get chance, I want to do something similar. I had a touch screen PC in my first Saab, but it was very basic, not that reliable and clunky but things have moved on with kit since then.
