It depends what you want, still or sparkling cider, and how quickly you want to drink it. If left to its own devices it'll keep going until it runs out of either sugar or nutrients for the yeast so that could be weeks. It's not like beer where there are lots of nutrients so it ferments quickly.
If all you want is rough cider for immediate consumption, drink it when you're bored with waiting. If you want sparkling cider then wait until it's nearly finished before bottling, but use heavy bottles and be careful where you store it because if you aren't careful it'll blow a few caps. If you want still cider let it go all the way and expect to drink it next year.

how much sugar did you put in then ? Well I followed one of the recipes on here. Then I sort of added a bit for luck! Half a bag of sugar for 4 litres of final product!?!

Bottled mine a couple of days ago. It had a week in a 5 litre demi john. Receipe was
5 litres of Tesco Apple Juice
With half a litre warmed in a pan I added about 150g sugar and 3 desert spoons of honey, then half a pack of yeast.
Left it in there for 7 days until the bubbling went down to every 8 or 9 seconds. Bottled it and added 1/2 a teaspoon of sugar. I had a taste and its bloody perfect. Really dry, and just the right amount of fizz. Hopefully these other bottles that have now sat for a few days will be even better.

one batch i did with probably way too much sugar absolutely hums of alcohol ;D the other seems a lot milder. i think I'm gonna knock out a few a week i was thinking if you used a fruit syrup instead of sugar you might get some interesting flavours.

Ye might smells really strongly of alcohol. I'm hopefully picking 3 more demijons up so can at any time can have 20 litres brewing.

Was with SWMBO this weekend, so we collected a load of apples from her trees. After juicing them & putting the juice in some demijons we added some sugar, then some sodium metabisulphate to kill off any nasties that may have been lurking. Waited 24 hours, then put in some cider yeast & dumped them in an airing cupboard. (before yeast added, its cleared up a little bit now) Will update in a month when we bottle it

Quick update, got back to the flat and the curse word in the cider has now sunk to the bottom, leaving a perfectly clear, perfect tasting alcoholic apple drink. Well proud Matt

Argh, According to the missus, one of the demijons is bubbling nicely, the other isnt doing anything at all She has put a bit more yeast in but still nothing Any ideas?

Leave it somewhere warm. Sometimes cider can take a few days to start.

That kit will do fine, I've got a pressure barrel for my brews, got it from Wilkinsons - no more than £15 I seem to remember.. You need to be able to read instructions and know how to wash/get things clean and its a piece of cake ! Just ask if you need more help ! Got mine brewing now for the last few days... wee bubbles of air coming from the vent i put in the lid of the bin Still havnt decided what to bottle them in, would using 2L plastic water bottles with a screw top do the job? And how much sugar would you add to a bottle that size?

And think i've hit a problem! I left the lager fermenting away in my student house on friday, then came back to it last night to find the room temp down to 14 degrees! Fermentation had stopped! And its only been brewing a few days Flicked the heatin on straight away and the room was 19/20 degree this morn but there was no sign of fermentation.... have i killed my beer? Or will it start up again?

Need a bit of help. Just finished cider brew mk2 and its far to strong and dry. Tastes more like a decent dry white wine. Any tips on how to make it a bit sweeter next time so its just like dry cider.

Any tips on how to make it a bit sweeter next time so its just like dry cider. Matt From a purist's perspective, dry cider is what you've made, cos real dry cider is really dry. "dry" cider as sold in supermarkets and pubs usually has added sugar or sweetener and has been pasteurised to stop it fermenting. You have two choices, get to like dry cider, or sweeten your cider. If you add sugar it'll start fermenting again, so add sucralose(Splenda) instead cos it tastes like sugar but yeast can't use it to ferment.
