So, correct me if I'm wrong, but I could take a chip or a small panel from my car to an appropriately equipped paint shop and they could do some magic on it and match the colour? Here's the tricky bit, once I had that match which I guess would be in the form of some sort of mix of rgb, is there any paint I can get that I can brush on? I don't have spray gear, it's not that sort of project and I don't mind spending time flatting it back. It's not a touch up amount, I need half a litre or so.
I don't know if this is even possible. I bet one of you does.

I know you can get colour matched aerosols as I've done that before. You can now get colour-matched 2 pack aerosols also - though you should use a really good, ideally air fed mask for this.
If you can find a place that colour matches for aerosol, I suspect you they will also make something suitable for brushing. No idea what paints can be flatted back these days. There's a lot of stuff on the Internet about hand painting cars with rustoleum. Perhaps that can be colour-matched.
If you want a quick and dirty solution, larger B&Qs do colour-matching. Obviously you don't want indoor paint but something durable like outdoor paint for front doors. Not sure what they would sell you wouldn't yellow over time though.

Most paint suppliers will be able to match your paint, either matching it to an existing colour or a custom mix, they can then save the custom mix for future use. You can then buy a tin of 2k and just paint it on using a good quality brush.

Have had a couple of mates roller paint on with good uniform finish , just make sure the rollers you use are ok for the paint.
