You're right at the bottom of the value scale but you might just pick up an E30 2 door. It'll probably be ratty and probably a 4 pot but it's a fine machine with rwd, and will feel fairly modern, probably essential for a daily, whilst looking quintessentially 80s.
Or you could bottle it and buy an E36, you might even find a 328i on that budget.

Good suggestions there Mr Popper. Both FWD, I had it in my head that it had to be RWD for some reason, but that opens up all sorts of possibilities. Thanks, although the Thunderbird is RWD, and is quite well set up, and due to having independent suspension all round it even handles well. Plus, you can get them in both V6 & V8, and some were even Supercharged

I was just thinking you could almost buy my E36 Coupe for that price and I don't think you'll find a better example anywhere. So that's a 4 pot, but a very very nice 16v 4 pot that's a surefire future classic! It sounds like you're looking for something older, but for everyday usability I don't think they can be beaten as they've got the creature comforts, but with easy DIY mechanicals and good ones stand out from the rubbish and mine is 21 years old now, so definitely Retro! A 635csi would be perfect, but one that's anywhere near that sort of price today will be a bad one!

Manta Monza MGB GT Celica 2.0 ST 70's or 80's the later version with swivel up lights maybe too boxy though? Late 80's Celica 2.0 GT Capri obviously Early RX7 924/944 Scirocco GT6 project possibly Lancia Gamma if there are any left Scimitar SE4 coupe project Audi 2.2 coupe (quattro shape) Rover P5 Coupe project Sunbeam Rapier Alfasud sprint veloce or GTV6 project Datsun 280ZX Bond Equipe Edit: few more Maserati Biturbo Colt Celeste or Sapporo Audi 100 S coupe Fiat 124 coupe project Not strictly a coupe but you'd get a decent usable Scimitar SE5a for 2k too. some good ideas actually, although a lot on that list you wouldn't be able to get for even close to 2k =( mk3 celicas and sciroccos are fairly decent prices atm

E34 6 series would be my choice, E36 wouldn't be one is do an engine and drivetrain upgrade on, unless it was to put a 4.4 V8 in it.

A gen-5 Celica, based on my experience is an excellent value coupe. Decent 2.0L (Non Turbo GT4) go for around £1k for a decent one. Reliable Revvy engine, Japanese build, creature comforts that actually work and pop up head lights! Other than that its TR7 but you would be hard pressed to find a decent one under £2k these days. The Celica is better in every way although it does not have the 'character' of the TR7. Celica by Robert Seymour, on Flickr

A bit new, but a Ford Probe, if you could live with saying "I've got a Probe, would you like to see it?" As a cheesy? chat up line. I'd say Manta, if you can find one, before they start climbing in price.

Living 15 miles from Essex it's Ford central round here but my old man worked for Vauxhall in the 80s, my first decent cars were mk2 Cavs, a 1.6 GL hatch and an SR saloon, and for that reason I have a soft spot for the Griffin. I will have another Griffin one day, been lining up my mate's dad's Carlton GSi 24v. When he sells, I'm buying!

That is a beaut, I'm going to have a chat with a mate about the logistics of getting it back from Scotland and hopefully I can get in there before she goes Thanks for all the suggestions from everyone, had a feeling this would be the best place to ask the question! After seeing all the recommendations, I am tempted to wait a couple more months and double my original budget now to be honest.

Nissan Silvia, would have to be an import to be a coupe for the S12 or S13... (80's) maybe might find a Z31 300Z for a reasonable price but its likely to be a bit crusty, you certainly won't get a 240 or 260Z for a price that won't make you clench up.
Maybe an early RX7 with a knackered engine would be about good for a V8 conversion.
