So, a few of us were chatting at Area52, and basically decided it would be good to have a thread to share recipes on in here, as we love our food and its a good way to spread the info. (Chocofruitpancakes with caramel nut cream & alcoholic pineapple cake... erm... thing :D ) 9) touretteseddy's Diced Game Birds Pie with Whisky10) Ben90210's Chocolate Brownies11) Skinnylew's Caravan Special12) Colonelk's Chilli PoppersSooooooooooooooooo first up.... the Guinness Chocolate Cake (one of my personal favourite cakes EVER) Ingredients: 225g (8oz) Unsalted Butter 350g (12oz) Soft Brown Sugar 4 eggs, beaten 225g (8oz) plain flour 1/2 teaspoon baking powder 2 teaspoons Bicarb 400ml Guinness (if you love really dark and bitter stuff, swap this for FES, its a brutal cake and not as scoffable, but worth a try!) 100g (4oz) Cocoa 225g (8oz) Dark chocolate Right, first off grate the dark chocolate. I recommend using a blender with a grating attachment, otherwise this WILL take forever and get chocolate EVERYWHERE! Next mix the Guiness and the cocoa together in a bowl, put to one side. Sift together the bicarb, baking powder and flour in a seperate bowl. And in a big bowl (preferably a mixer) cream together the butter and the sugar. When creamed, gradually add the eggs. don't worry if you add them too fast and the mixture splits, doesnt really affect the overall cake Now add the flour and stout mixes alternately to the creamed eggs/sugar/butter mix.... do this with the mixer going... but be careful not to spray it in your face Then add the grated chocolate. Next, get a deep 8inch or ordinary 9inch cake tin, butter it (should do this before mixing really) then pour in the mixture! Cook for about 1hr to 1hr15 at 180C degrees! Makes a really moist, REALLY chocolatey cake It looks almost black, this IS correct You can make a lush icing for it too by...... Melting 175g (6oz) of white chocolate in a bowl with 175g(6oz) of butter and 1-2 measures of Whiskey. Get it just soft and mixed evenly, and when its a suitable consistency spread it on the cake. This too is epically awesome. Recipe from my mum, think its a slightly modified Gary Rhodes one TBH.

My ribs Thought i'd do a build thread seen as I was making some. You can either barbeque these or (as today) bung em in the oven. Start with big meat. Go to the local butchers for this. Nothing the supermarket will ever have will even come close. I've got a friendly butcher at Leeds Market, keep going back and they'll usually chuck a few extras in for nowt. Don't be afraid of indoor markets. Yes there will be women with mullets and yes there will be dolphin/wolf fleeces but ignore them and they'll ignore you. Try to avoid laughing whilst looking at them. Anyway enough rambling....big meat Get your sauce ingredients. Only thing I forgot to get in the pic was Ketchup and honey. Ketchup is THE most important part of this recipe. Doesn't need to be Heinz (though "value" stuff isn't great, best of with supermarket own brand). Makes it sticky like glue. Ingredients for sauce are: Ketchup Salt Pepper Tumeric Mild & Hot Chilli Powder Cumin (I get whole and smash it a bit) Garam Masala Smoked Paprika Soy Sauce Teri Yaki Sauce Lea & Perrins Worcestershire sauce Chilli Sauce You'll notice that there aren't any measurements. Errm I don't use them just as much as I think in then ajust as nescessary. The only thing I can tell you is that I used roughly 3/4 of a 470g bottle of ketchup. Anyway mix them together and you get this Then add the other ingredients. Basil Coriander Dill Ginger Garlic Variety of Chillis Honey (at least 2 tablespoons) Then you whizz it all up with a hand blender thing. Next I chucked the meat in And then put em in a pyrex dish and poured the sauce on. I covered them in foil and they're now in the oven at 120 degrees where they'll stay for the next 4 or 5 hours. Will get pics when they're done As an aside when you're bbq'ing them it's best to keep some sauce aside to brush on as they cook. Matt

Nice work Matt! They look tasty Just need B8D along now with his chilli sauce recipe and this thread will be literally cooking! haha For those attempting the Guiness Choco cake, if you like chocolate, youll love it! Feel free to give feedback and or make suggestions for alterations in here

The Guinness cake is excellent - absurdly rich and heavy, but very, very edible. I might just have to make one soon.

My Meatloaf.
Ingredients:
1 lbs Minced Beef 1 lbs Minced Pork 6 oz Salami 4 Slices of Bacon 1 Egg 3 Slices of Bread in Bread Crumbs 2 Red Onions 2 Cloves of Garlic 2 tsps Mustard Powder 2 tsps Chilli Powder 2 tbsps Worcestershire Sauce
1. Mix the Mince together.
2. Chop the Salami into small cubes and mix in with the Mince.
3. Chop the Onions very finely, crush the Garlic and put it into a bowl with the Egg, Mustard Powder, Chilli Powder and Worcestershire Sauce. Mix together and gradually add the Bread Crumbs. Keep mixing until it is almost sticky and stodgy. You may need to add a little bit of water if it isn't becoming sloppy enough.
4. Add the Mince and Salami into the mixture and mix until it is well worked in.
5. Put everything into a loaf tin and lay the slices of Bacon over the top.
6. Let it cook for about 1hr 30mins - 2hrs in a medium heat.
Serve with a Tomato Sauce and side of your choice.

Will, your recipe makes me hungry! I'm lucky that dutch supermarkets don't do 24 shopping, or I would be in my car getting the ingredients oh, and i think i got the bicarb thing sussed, it's not very common overhere, but i'll find it!

Right, this might sound really traveller, but bear with me, and brace yourself for dbizzle's brilliant weird little snack things.
You need: - just-Rol puff pastry - hot dogs - Marmite - Emmental cheese
Roll out the pastry. Smear Marmite all over it. Wrap it around the hot dogs so that they look like long sausage rolls, then chop them up so they're in bits about an inch long. Grate the Emmental all over it. Whack it under the grill for 10-15mins.
It sounds like the worst kind of rubbish, but they're surprisingly moreish and you can irritate guests by getting them to guess the ingredients. (People always assume you've made them out of real food.)

Another weird one. (I do know how to cook proper meals as well, I promise!) I made this thing a while ago before going on holiday, as I wanted to use up everything that was left in the fridge... but it turned out to be really nice. For want of a better name, let's call it dbizzle's massive satay with coconut noodles and stuff.
So, you start off with chicken breast. (One per person.) Stick it in the oven for however long it says to on the packet. I dunno, I'm not Gordon Ramsay. 40mins at 200 degrees maybe?
While that's cooking, get some thick egg noodles on the boil. They only take a few minutes, and once they're done drain off the water and throw them in a wok with a good squirt of sesame oil. When they start to crisp up a bit, throw in a chopped onion and a couple of chopped up red and green peppers. Then pour in a whole can of coconut milk and keep it on a high heat until it starts to condense.
About ten minutes before the chicken's finished, take it out of the oven. Slice the chicken breasts open and stuff them with peanut butter. Wrap a couple of rashers of streaky bacon around them (to seal them up and stop the peanut butter seeping out) and whack them back in the oven.
Simple, eh?

OK - this is my camping - one pot only knock it all together 'posh' mix. Depending how many people.... Start boiling some water for the couscous.... Prep the following 2hrs+ (or leave it all day while at the show) 4 chicken breasts - diced and into a bowl Chuck over: 2 tbsp Olive Oil 1/2 tsp suger Juice from 1 Lemon (can add rind too if you want - optional) Juice from 1 Lime Raisins (rehydrate 'em with hot water for 10mins - in a glass - water just over top of pile - leave 'em) 1-2 tsp Salt - mix to a paste with - Finely chopped or Crushed Garlic (cheat with Garlic Salt if you want while out n about) Leave all that in the bowl for as long as you want..... Box of couscous - add boiling water, juice of lemon and large kn*b of butter - leave it to prep. Cook the bowl of goodies - usually takes 8-10mins (couscous prep time ;D) Tub of Black Olives - tear 'em up and remove stones of course. Fork through the couscous to make sure it's all sorted. Chuck in cooked chicken, raisins and Olives Add some mint leaves and coriander - finely chopped too. If you're still on the gas - pine kernels toasted can be thrown in too - lovely addition. excellent warm - but overdo it and keep the rest for later......

Lime Chilli Beef - one of my fave's....
Beefsteak - chunked using a pair of scissors...... into the bowl with olive oil (2-3tbsp) 1 fresh chilli - de-seeded and chopped (fine as you want) Chilli powder Lime Juice sugar Ginger (fresh, caramelised or powder - your choice)
Grate - finely chop - mash - above and add to beef. Longer you leave it the better taste - chuck it on the gas(camp stove) or silver foil on the BBQ. If BBQ - then skewer the Beef and add red/green/yellow peppers as a shish kebab.......

Desserts! - 2 of them:
1 - slightly more complicated - adult only: Cake - standard 'hotel' cake - or flavoured (I get lemon) Pinapple chunks - 2 400g tins Ground Almonds - 450g Sugar - 250g 4 Eggs (seperate white n yolks - you use the yolks) VODKA - ;D Juice of 2 Orangesand Lemons Cream - if you want the topping (whip it up)
Crumble the cake - just rip it to bits..... done
Almonds- Sugar - Egg yolks - Juice - VODKA into pan - onto gas stove..... mix it up - throw in pinapple chunks (drain the juice - then substitute that for VODKA ;D) - mix it all together for a couple of minutes - DONE.
a: Layer of cake bits - sprinkle with VODKA b: Layer of Pineapple mix repeat steps a and b to top of bowl whip up cream and slap on top.........
this thing can be lethal if you like your vodka!!!
2 - easy enough - all sweet tooths Pancake mix (thicker than 'usual')- add choc chips, lemon juice (rind if possible too) and raisins Drop some mix onto hot plate - pan or whatever - make a pile of 'em
While they're going...... 2tbsps sugar into pan and caramelise - add medium carton of cream (sugar will go solid - don't worry). Keep heating and it'll melt again.....chop some pecan nuts and throw in.
take pile of pancakes - pour over caramel sauce with nuts (as it cools it'll thicken a lot......) Stuff yourself!

Diced Game Birds Pie with Whisky
Serves 4
1 pack Diced Game Birds 400g 20g Butter 250g Pork Mince 4 tbsp Sour Cream 4 tbsp Whisky 80g Cheddar Cheese (grated) 80g Dried Cranberries 1 bunch Parsley (chopped) Salt & Pepper 500g Puff Pastry 1 Egg Yolk
Pre heat the oven to 180ºC/350ºF/Gas 4. Grease a 1ltr pie dish with butter. Mix together the butter, pork mince, whisky, sour cream, cheddar and cranberries and place into the pie dish. Sprinkle with parsley.
Pat dry the diced game birds with kitchen paper and season with salt and pepper. Place the game birds equally on top of the meat mixture. Brush the pie dish rim with egg yolk. Roll out the pastry to 5mm thick to fit the pie dish and place on top. Press the pastry onto the rim carefully. Brush the pastry with the left over egg yolk.
Bake in the middle of the oven for 35-40 minutes. Serve immediately.
Serve with potatoes and root vegetables ;D
