I've got a plastic grill that has (had!) a steel bolt bonded to it for mounting purposes. Of course the bolt has sheared off so I need to replace it.
I planned to drill out the remains of the bolt and bond a new one in, but wondered what might be best to use?
I've used 2-part epoxy glue before but this always seems 'brittle' and prone to poor adhesion.
Any suggestions?

Polyurethane window sealant is what I use on many applications bonding plastic & metal. Allows slight flex unlike 2 part epoxy which sets rigid.

You need a 2 part structural adhesive - the araldite type adhesive has you say tend to go brittle - ideally you the range formulated for plastics / plastic bumper repairs - having said that there is probably something within the sikaflex range that would do the job for you

Sounds like a problem I once had with an MG ZS180 where the exterior door handles part company with the moulded in fixings.

I also use PU type adhesive such as for windscreens. I havent used it but people often recommend Tigerseal like you have linked, that looks good to me. Wear gloves, if its like other similar products nothing will remove it from skin once set.
